Vinification
The method of vinification used for the Grain d'Automne is not very common. The grapes, stemmed and crushed, undergo a maceration at high temperature (around 35C). Two days are enough to achieve the color and the aromas we were looking for without extracting too much of a tannic structure. Later, the must will be treated like a rosé, at low temperature in order to preserve the freshness and lushness of the aromas received during maceration.
 
Tasting
The Grain d'Automne can be served with all kind of meals. It develops basic notes and aromas of black berries. To be served fresh, between 14 and 16C.
 
Corking
In the year 2000, we decided to use plastic corks for the Grain d'Automne. These corks, manufactured in Australia, allow a certain porosity for oxygen. This porosity is certainly too small to allow an aging of wine in the bottle, but it is enough for wines to be consumed at young age like the Grain d'Automne, on which we look for a certain reduction of aromas.
