The Cuvée d'Antan is made of Syrah, which counts among the oldest vines of our appellation: 1962 ! The Mourvèdre has been planted in 1967.
Old vines, typical variety, long maceration and a respectful aging in oak casks..... All the conditions were united to create the 2001, a very remarquable Cuvée d'Antan....

| Vinification |
|
The grapes are crushed and stemmed before undergoing a long maceration of 4 weeks. This is the time we need to achieve a strong frame and a nice balance allowing an aging of 12 months in wooden barrels. 100% of the wine was aged for the first time in "boutes" in the year 2001 !

| Tasting |
|
The Cuvée d'Antan surely is a wine to be aged, and the 2001 will keep this promise at least for ten years if not fifteen !
It offers a nice balance in taste adorned with a vast aromatic complexity of dark fruits (bilberry, blackberry), spices (pepper, liquorice) and even some perfumes of violet.

| Suitable meals |
|
A red meat in sauce or a game will be perfect with the Cuvée d'Antan, thanks to its generous nature and its sunny bouquet. If you have some chanterelles (as one finds in the underwood of the vineyard), do not hesitate.
To drink at room temperature (between 16 and 18°C).
