| Vinification |

Part of the grapes are directly pressed to assure freshness and subtlety, and the other macerates at low temperature in order to extract all the complexity of the fruit.
After fermentation, the wine is slowly improved on fine yeast until the middle of winter.

The aromatic complexity of this wine varies from exotic fruit aromas to white flowers and citrus fruits, peppered with notes of vanilla and typical spices from our region.
At young age, its fruit is ripe and present. After some years, its exotic dimension improves its complexity.

| Suitable meals |
|
Its subtlety and its fruit predestines it all naturally to fish. It will also underline with delicacy the bouquet of goat cheese or as aperitif with some olives from Provence. To be served chilled, between 8 and 12°C.
